THE RECIPE
Serves: 2
INGREDIENTS:
2 tsp oil
1 small onion, finely diced
350g beef mince
2 garlic cloves, minced
2-3 inches tomato puree
2 tsp fajita spice blend – DIY recipe here: https://hedgecombers.com/homemade-fajita-seasoning/
1 red pepper, finely diced
1 stock pot (or stock cube dissolved in a little water)
1/2 tsp chilli flakes
1 pouch microwaveable rice
To Serve:
1 avocado, diced
coriander/cilantro, chopped
red onion, finely sliced
1 lime, quartered
2 tbsp sour cream
INSTRUCTIONS:
Preheat a saute pan and add the oil.
Fry the onion for a few minutes, then add in the beef and start to brown before tossing round the pan.
